    Dice the onion and mince the garlic. Warm the olive oil in a large pot over medium heat and cook both for about 5 minutes, until the onion is translucent and the garlic smells sweet.

    Add the whole chicken breast, V8 juice, diced tomatoes, drained beans, corn, chili powder, cumin, and oregano. Mince two chipotle peppers and stir them in with two spoonfuls of adobo sauce.

    Bring the pot to a boil over medium-high heat, then lower it to a gentle simmer and cover. Cook for about 45–60 minutes, stirring every so often, until the chicken reaches 165°F and pulls apart easily.

    Move the chicken to a board and rest it 5 minutes. Shred it with two forks, return it to the pot, and simmer uncovered 5 minutes so the chili thickens.

    Taste before adding salt; beans and vegetable juice vary in saltiness. Add more adobo for heat a spoonful at a time, then serve with your favorite toppings.
