    Whisk the rice vinegar, hoisin, peanut oil, soy sauce, honey, garlic, ginger, sesame oil, and optional peanut butter in a jar. Shake until the dressing looks smooth, then chill it while you prep the salad.

    Shred the Napa cabbage and chop the iceberg lettuce. Julienne the carrots, drain and pat dry the mandarin oranges, and slice the green onions. Keeping the produce dry helps the salad stay crisp.

    Put the cabbage and lettuce in a large bowl and toss with a light drizzle of dressing. Add the chicken, carrots, oranges, and green onions, then toss again until the pieces are coated.

    Top with almonds, sesame seeds, chow mein noodles, and wonton strips right before serving. Pass the remaining dressing at the table so each person can add more.
