    Cook 1½ cups basmati or long-grain rice (about 3 cups cooked) and keep warm. Meanwhile, thinly slice 1–1¼ pounds boneless chicken thighs. Toss with shawarma spices (1 teaspoon cumin, 1 teaspoon paprika, ½ teaspoon turmeric, ½ teaspoon coriander, 1 teaspoon salt), 1 tablespoon oil, 2 minced garlic cloves, and a squeeze of lemon. Marinate 15–30 minutes if you can.

    Heat a skillet screaming-hot with a thin film of oil. Sear chicken in batches 3–4 minutes per side until browned with crisp edges and cooked through. Deglaze the pan with a splash of lemon or water and scrape up the browned bits — that's your bowl sauce.

    Build bowls: rice first, then hot shawarma chicken, then chopped tomato, cucumber, red onion, and herbs. Optional: warm chickpeas or pickled peppers on the side.
