    Butterfly the chicken breasts and cut them into pieces sized for the slider buns. Cover with wax paper and pound them to an even thickness, then marinate in the buttermilk for at least 30 minutes or overnight.

    Set up three bowls: flour with seasoned salt and pepper, beaten eggs, and breadcrumbs mixed with Parmesan and parsley. Lift the chicken from the buttermilk, let the excess drip off, and coat each piece in flour, egg, and crumbs.

    Heat the oven to 450°F and bake the frozen mozzarella sticks for 7 minutes. Remove them and lower the oven to 350°F. Meanwhile, heat the olive oil and butter in a skillet over medium-high heat and cook the chicken about 4 minutes per side, until golden and 165°F inside.

    Set the bottom buns in a baking dish. Add chicken, marinara, provolone, and a mozzarella stick to each one, then cover with the bun tops. Stir together the melted butter, salt, garlic powder, Italian seasoning, parsley, and Parmesan; brush it over the tops.

    Cover with foil and bake for 8 minutes. Uncover and bake 2–3 minutes more, until the tops are golden and the cheese is soft. Serve warm.
