Heat the oven to 425°F. Slice 2 chicken breasts into 4 cutlets and pound them to about ½ inch thick. Pat dry and season with salt and pepper.

Set out flour, 2 beaten eggs, and a bowl of panko mixed with ½ cup grated Parmesan, garlic powder, and Italian seasoning. Coat each cutlet in flour, egg, then crumbs, pressing the crumbs into both sides.

Heat ⅓ inch oil in a large skillet over medium-high. Fry the cutlets 3–4 minutes per side, until crisp and golden; move them to a rack. They do not need to be fully cooked yet.

Spread 1 cup marinara in a 9x13-inch baking dish. Add the cutlets and spoon a little more sauce over each one, leaving the top crust partly exposed.

Top with mozzarella and a little Parmesan. Bake 10–12 minutes, until the cheese melts and the thickest cutlet reaches 165°F.

Broil for 1–2 minutes if you want browned cheese, watching the whole time. Rest 5 minutes and serve with pasta or salad.
