Chicken soups and noodles

Start with chicken you already cooked, or simmer thighs in the broth and shred them. Noodles and dumplings belong in the pot only as long as they need; leftover soup keeps better when the starch is stored separately. Taste the broth at the end and add salt in small pinches.

Make it easier: If you plan lunches, cook extra broth and chicken, then boil a fresh handful of noodles when you reheat.
