Cook the pasta in a separate pot of salted water until al dente, then drain and toss with a little olive oil. Keeping it separate protects the noodles from turning mushy in the soup.

Heat the olive oil in a large soup pot over medium heat. Add the onion, celery, carrots, garlic, and ginger if using. Cook 5–7 minutes, stirring, until the vegetables soften and the onion looks translucent.

Stir in the thyme, turmeric if using, salt, and pepper for 1 minute. Add the broth and chicken, bring it to a gentle simmer, cover, and cook 5–8 minutes, depending on thickness, until the chicken reaches 165°F.

Take out the chicken and shred or dice it. Return it to the pot and simmer 1–2 minutes more. Taste for salt, put noodles in bowls, and ladle the hot soup over them. Finish with parsley.
