Heat the oven to 400°F with a rack in the center. Pound the chicken breast to an even 1-inch thickness and coat both sides with taco seasoning.

Heat 1 tablespoon oil in a heavy skillet over medium-high. Cook the chicken about 5 minutes on the first side and a few minutes on the second, until the center reaches 165°F. Rest it 5 minutes, then chop into ½-inch pieces.

While the chicken rests, slice the jalapeño and green onions, chop the cilantro, and dice the avocado. Toss the avocado with lime juice so it stays bright.

Line a sheet pan with parchment. Spread half the chips over it, then layer on half the cheese and chicken. Repeat with the remaining chips, cheese, and chicken so the middle gets toppings too.

Bake 7–10 minutes, until the cheese has melted and the chips at the edges are lightly toasted. Scatter over the avocado, jalapeño, green onion, lime zest, cilantro, sour cream, and queso fresco.
