Pat 4 cube steaks dry and season with 1 teaspoon kosher salt, ½ teaspoon black pepper, and ½ teaspoon paprika. Dip each steak in 1 cup buttermilk beaten with 1 egg, then press into 1½ cups flour seasoned with ½ teaspoon garlic powder.

Heat ½ inch vegetable oil in a heavy skillet to 350°F. Fry 2 steaks at a time for 3–4 minutes per side, until the crust is deep golden and the meat reaches at least 145°F. Drain on a rack, not paper, to keep the coating crisp.

Pour off the oil, leaving 3 tablespoons drippings in the skillet. Whisk in 3 tablespoons flour and cook 1 minute, until the roux smells nutty. Gradually whisk in 2½ cups whole milk.

Simmer the gravy 4–6 minutes, stirring often, until it coats a spoon. Season with salt and pepper, then serve the steaks with gravy while the crust is hot.
