Heat the oven to 350°F. Cut the chicken into bite-sized pieces and season lightly with salt and pepper.

Melt 2 tablespoons butter in a Dutch oven or large pot over medium heat. Add the chicken, onion, and celery and cook for 3 minutes, stirring, until the chicken is about halfway done.

Add the broccoli and olive oil. Cook for 3–5 minutes more, until the chicken is cooked through and the broccoli is bright green but still has some bite. Take the pot off the heat.

Stir in the cream of chicken soup, sour cream, milk, garlic powder, onion powder, mustard powder, and half of the cheese.

Spread the mixture in a greased 9-by-13-inch casserole dish and cover with the remaining cheese. Cover and bake for 20 minutes.

Melt the remaining butter and mix it with the crushed crackers. Uncover the casserole, raise the oven to 400°F, sprinkle on the crumbs, and bake 8–10 minutes until the top is golden.

Let the casserole rest for 5 minutes before serving over rice, biscuits, or mashed potatoes.
