Method

4 steps

  1. 1

Heat the oven to 400°F. Butterfly 4 boneless chicken breasts and pound them between sheets of parchment to about ¼-inch thick. Season both sides with 1 teaspoon kosher salt and ½ teaspoon black pepper.

  2. 2

Lay 1 slice ham and 1 slice Swiss cheese on each breast, keeping a ½-inch border. Roll each piece tightly from a long side and secure the seam with toothpicks.

  3. 3

Set up 3 shallow bowls with ½ cup flour, 2 beaten eggs, and 1 cup panko. Coat each roll in flour, egg, then panko, pressing the crumbs onto the sides.

  4. 4

Place the rolls seam-side down on an oiled sheet pan and drizzle with 2 tablespoons olive oil. Bake 25–30 minutes, turning the pan once, until golden and the center reaches 165°F. Rest 5 minutes, then remove the toothpicks.
