Method

4 steps

  1. 1

Heat the oven to 400°F. Set the bacon on a foil-lined rack and bake for about 25 minutes, until it reaches the crispness you like. Move it to a paper towel-lined plate.

  2. 2

Fillet each chicken breast into thinner cutlets and pound them to an even thickness. Season with salt, pepper, and garlic powder, then cook in olive oil over medium heat for about 4 minutes per side, until golden and 165°F. Rest 5 minutes and slice.

  3. 3

Toast the bread while the chicken rests. Slice the tomatoes, dry the lettuce, set out the cheese, and break the bacon into pieces so assembly goes quickly.

  4. 4

Spread mayonnaise on one side of each slice. Layer lettuce, tomato, chicken, cheese, and bacon on the first slice, add the middle slice, repeat the layers, and top with the last slice. Press gently and cut each sandwich in half.
