    Whisk the oyster sauce, soy sauce, sesame oil, chicken broth, cornstarch, and sugar in a small bowl. Stir until no dry cornstarch is hiding on the bottom.

    Cook the chow mein noodles according to the package directions, then drain and rinse them under cold water. Shake off excess water so the sauce will cling later.

    Heat the oil in a large wok or skillet over medium-high heat. Slice the chicken into thin strips and stir-fry for 4–6 minutes, until lightly browned and 165°F. Move it to a plate.

    Add the carrot, cabbage, and garlic to the same pan. Stir-fry for 3–4 minutes, until the carrot is barely tender and the cabbage has softened but still has a little bite.

    Return the chicken and noodles to the pan. Pour in the sauce, toss constantly for about 2 minutes, and cook until it turns glossy and coats the noodles. Scatter on green onions and serve hot.
