Method

5 steps

  1. 1

Slice the chicken breasts into thinner pieces and season with lemon pepper. Coat them with ¾ cup Caesar dressing and chill for 20 minutes while you grate the Parmesan.

  2. 2

Heat the olive oil in a wide, high-sided skillet. Cook the chicken without moving it for 4–5 minutes per side, until browned and 165°F inside. Rest it for 5 minutes, then slice and return any plate juices to the skillet.

  3. 3

Melt the butter over medium heat and cook the garlic for 1 minute. Add the broth, then whisk the remaining Caesar dressing with the milk and pour it in. Bring the liquid to a gentle boil.

  4. 4

Add the angel hair, bending it into the pan as it softens. Simmer 4–5 minutes, tossing often so the strands do not stick, until tender and still surrounded by sauce.

  5. 5

Lower the heat and stir in the capers, Parmesan, lemon juice, and sliced chicken. Toss until the cheese melts and the sauce clings to the noodles, then finish with parsley and cracked pepper.
