    Bring 6 cups low-sodium chicken broth, 1 sliced carrot, 2 sliced scallions, 1 smashed garlic clove, and a 1-inch piece of ginger to a gentle simmer in a pot. Cook 8 minutes so the broth smells savory.

    Add 1 pound thinly sliced boneless chicken and keep the broth just below a boil. Simmer 5–7 minutes, stirring once, until the chicken reaches 165°F and the pieces are opaque all the way through.
