Chop the broccoli into small florets and cut the chicken tenderloins into bite-size pieces. Toss the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.

Melt the butter with the olive oil in a wide oven-safe skillet over medium heat. Cook the chicken for 6–8 minutes, stirring a few times, until browned and 165°F in the center.

Add the orzo and stir for 2 minutes so the grains pick up the pan juices. Pour in the broth, scrape the bottom, then add the room-temperature milk and broccoli.

Lower the heat and simmer uncovered for 8–10 minutes, stirring every couple of minutes, until the orzo is tender and most of the liquid is absorbed. The skillet should still look creamy, not dry.

Stir in half the cheddar, then cover with the rest. Broil on high for 3–5 minutes until melted and spotted golden, watching closely so the cheese does not burn.
