Rice cooks in the same dish as seasoned chicken and a creamy mushroom sauce, so dinner comes out of one pan.
Amounts scale with servings. Pan size and cooking time may need adjusting for larger batches.
Heat the oven to 375°F. Warm the oil in a large oven-safe skillet over medium-high heat. Cook mushrooms and onion for 8 minutes, until the mushrooms give off their liquid and it mostly evaporates.
Stir in the rice, then the broth and sour cream. Season the chicken with paprika, salt, and pepper and nestle it into the rice.
Cover tightly with a lid or foil and bake for 35 minutes. Uncover, scatter the mozzarella, and bake 10–12 minutes more, until the rice is tender and the chicken is 165°F.
Rest 5 minutes before serving so the sauce settles.
Rinse the rice so the casserole does not turn gummy.
Use a tight cover for the first bake or the rice will dry at the edges.
Chicken breasts work if they are not thick; check temperature at 30 minutes.
Plain Greek yogurt can replace sour cream.
Not as a straight swap. Brown rice needs more liquid and about 20 extra minutes. Stick with white rice here.
Refrigerate in a shallow container for 3–4 days. Reheat covered with a spoonful of broth until the chicken is 165°F.
