    Whisk the neutral oil, rice vinegar, soy sauce, toasted sesame oil, brown sugar, ginger, and sesame seeds in a small bowl or jar. Let it sit for 5 minutes so the sugar softens into the dressing.

    Slice the red onion very thin and soak it in ice water for 5 minutes, then drain. Drain the mandarins, chop the chicken, and slice the avocado just before assembling.

    Divide the greens between two bowls. Add the chicken, mandarins, almonds, avocado, and onion. Stir the dressing once more, drizzle it over the salads, and toss gently so the avocado stays in pieces.
