    In a Dutch oven, warm 1 tablespoon butter or oil over medium. Soften 1 diced onion, 2 diced carrots, and 2 celery stalks 6–8 minutes. Add 3 minced garlic cloves 30 seconds. Stir in 6 cups chicken stock, 1½ pounds boneless chicken thighs (or leftover cooked chicken), 1 bay leaf, ½ teaspoon thyme, salt, and pepper. Simmer 20–25 minutes until chicken is cooked and shreds easily; remove chicken, shred, and return to the pot. (Skip simmer time if using leftover chicken — just heat through.)

    Taste the broth — it should be savory and seasoned. Optional: whisk 2 tablespoons flour with a splash of cold stock and stir in to thicken slightly, simmering 3–4 minutes.

    Make drop dumplings: mix 1½ cups flour, 2 teaspoons baking powder, ¾ teaspoon salt, then stir in ¾ cup milk and 2 tablespoons melted butter until a soft sticky dough forms. Don't overwork it. Drop spoonfuls onto the simmering stew (not into a rolling boil).

    Cover tightly and cook 12–15 minutes without peeking — steam cooks the dumplings. They should look puffed and cooked through (no wet dough in the center). Discard bay leaf. Ladle into bowls. You want fluffy dumplings floating on rich chicken stew — not dense dough bombs in a bland watery broth.
