Mix the lemon pepper, Italian seasoning, mustard powder, and red pepper flakes in a small bowl. Cut the chicken into ¾-inch pieces and toss with the seasoning.

Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 2–3 minutes per side, until browned and 165°F. Move it to a plate while you build the sauce.

Bring a large pot of salted water to a boil. Add the wine to the chicken skillet and scrape up the browned bits. Simmer about 4 minutes, until reduced by half, then add butter and garlic for 1 minute.

Whisk in the flour and cook 1–2 minutes. Add chicken broth and half-and-half in small splashes while stirring. Bring to a gentle simmer, then add hot sauce and the remaining seasoning.

Cook the penne until al dente, adding broccoli during the last 4 minutes. Drain, reserving ½ cup pasta water. Lower the sauce heat, stir in Parmesan and Asiago, then fold in pasta, broccoli, chicken, and lemon juice. Add pasta water if needed.
