Mix ½ cup flour with 4 tablespoons finely shredded Parmesan. Slice the chicken breasts into 2–3 thin pieces, pound them to about ½ inch thick, and pat dry.

Season the chicken with salt, pepper, and Italian seasoning. Dredge it in the flour mixture and tap off the extra coating.

Heat olive oil in a large skillet over medium-high. Sear the chicken in batches for 4–5 minutes per side, until golden outside and cooked through. Move it to a plate.

Wipe out excess oil but leave the browned bits. Melt the butter over medium, whisk in 3 tablespoons flour, and cook 2 minutes. Add broth in small splashes, whisking, then add the milk.

Stir in onion powder, garlic powder, mustard powder, hot sauce, and broccoli. Bring the sauce to a boil, lower to a gentle bubble, and cook 4–5 minutes, until the broccoli is tender.

Turn the heat to low and let the sauce cool for a minute. Sprinkle in the cheddar and Parmesan a little at a time, stirring until smooth. Return the chicken, spoon sauce over it, and heat uncovered for 5 minutes. Add bacon if using.
