Heat the oven to 400°F. Thinly slice the green and purple cabbage and the green onions. Toss them with the Caesar dressing and grated Parmesan, then cover and chill while the chicken cooks.

Stir the chicken tenders with the Greek yogurt, water, and ¼ teaspoon salt. In another bowl, mix the panko, onion powder, garlic powder, remaining salt, pepper, and oil.

Spread the panko on a parchment-lined baking sheet and toast it for 2–4 minutes, watching closely, until golden. Return it to the bowl, press each yogurt-coated tender into the crumbs, and set the pieces on the sheet.

Bake the chicken for 30 minutes, turning halfway, until the coating is crisp and the center reaches 165°F. Slice the tenders, toss them and the croutons with the chilled slaw, and serve right away.
