    Heat 2 tablespoons olive oil in an oven-safe skillet over medium-high. Sear the chicken 3–4 minutes per side until golden, then move the skillet to the oven for 8–12 minutes, until the thickest piece reaches 165°F.

    While it cooks, toss 2 cups diced ripe tomatoes, ¼ cup chopped basil, 1 minced garlic clove, 1 tablespoon balsamic vinegar, and a pinch of salt. Let it sit 10 minutes so the tomatoes turn juicy.

    Rest the chicken 5 minutes, then spoon the tomato mixture over each piece. Add a little grated Parmesan and serve while the chicken is still warm.
