Cut 1½ pounds boneless chicken thighs into 1-inch pieces. Toss with ¾ teaspoon kosher salt, ¼ teaspoon black pepper, and ⅓ cup cornstarch until each piece looks lightly dusted.

Heat 2 tablespoons neutral oil in a wide skillet over medium-high. Cook the chicken in one layer for 4–6 minutes, turning once or twice, until browned and 165°F in the thickest piece. Work in batches if needed, then move it to a plate.

Whisk ¾ cup orange juice, ¼ cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon rice vinegar, 2 minced garlic cloves, and 1 teaspoon grated ginger. Pour into the skillet and simmer 2–3 minutes, until glossy and slightly reduced.
