Heat the oven to 500°F with a pizza stone or upside-down sheet pan inside. Let 1 pound pizza dough sit at room temperature for 30 minutes.

Toss 1½ cups shredded cooked chicken with ¼ cup barbecue sauce. Stretch the dough on parchment into a 12-inch round, leaving the rim a little thicker.

Spread ⅓ cup barbecue sauce over the dough, leaving a ½-inch border. Scatter on the chicken, 1½ cups shredded low-moisture mozzarella, ¼ thinly sliced red onion, and a little cilantro if you like.

Slide the pizza and parchment onto the hot surface. Bake 9–13 minutes, until the crust is browned underneath, the cheese is bubbling, and the rim sounds hollow when tapped.

Cool the pizza for 3 minutes so the cheese sets enough to slice. Add a thin drizzle of barbecue sauce and cut into wedges.
