Heat the grill to 425°F, or heat the oven to 425°F. Cut the chicken thighs into 1–1½-inch pieces, cube the potatoes, and slice the pepper and red onion so everything cooks at about the same speed.

Toss the chicken with ½ cup barbecue sauce, oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Fold in the potatoes, bell pepper, and onion until the sauce is spread around.

Set out four heavy-duty foil sheets and divide the mixture among them. Fold the short sides together twice, then tuck the ends up tightly, leaving a little air space for steam.

Grill the packets for 20–25 minutes, turning once, or bake them on a sheet pan for 25–30 minutes. Open one carefully; the chicken should reach 165°F and the potatoes should give easily to a fork. Spoon over the remaining barbecue sauce.
