Method

4 steps

  1. 1

Pat 1 pound chicken thighs dry and cut into thin strips. Mince 1 stalk lemongrass (tender white/pale green only — discard the woody top), 2 garlic cloves, and a little ginger if you have it. Toss the chicken with 1½ tablespoons fish sauce, 1 teaspoon sugar, the lemongrass, garlic, black pepper, and 1 teaspoon oil. Rest 15–20 minutes while you warm the baguettes.

  2. 2

Heat a skillet over medium-high with a thin slick of oil. Spread the chicken in a single layer and cook 3–4 minutes without moving, then toss until browned and cooked through, about 6–8 minutes total — you want caramelized edges and no pink centers. Splash a teaspoon more fish sauce in the last minute if it needs salt.

  3. 3

Split baguettes or crusty rolls and toast cut-side down until the crumb is warm and the crust crackles. Layer mayo (and pâté if you have it), the hot chicken, pickled carrot (and daikon if you've got it), cucumber spears, cilantro, and thin jalapeño. Squeeze lime over the filling.

  4. 4

Close the sandwiches and eat while the chicken is still warm and the pickles stay crunchy. You want juicy lemongrass chicken, cool pickle crunch, and a soft-but-crackly roll — not a soggy steam-soft baguette.
