    Mince two garlic cloves and whisk them with olive oil, balsamic vinegar, brown sugar, soy sauce, and plenty of black pepper. Add four chicken thighs, turn to coat, and marinate in the refrigerator for 1–8 hours.

    Heat the oven to 375°F. Pour the chicken and marinade into a baking dish, keeping the thighs in one layer. Bake for about 40–45 minutes, spooning the pan juices over the tops once or twice.

    Check the thickest thigh away from the bone; it should reach 165°F, with dark meat often more tender around 175°F. If the tops need color, broil for 1–2 minutes while watching closely.

    Rest the chicken for 5 minutes, spoon the glossy juices over it, and scatter on parsley before serving.
