- 1
Pat 4 boneless chicken breasts dry and season both sides with salt, pepper, and 1 teaspoon Italian seasoning. Dry meat sears; wet meat steams.
- 2
Heat 2 tablespoons olive oil in a large skillet over medium-high until it shimmers. Sear the chicken 5–6 minutes per side until deep golden and nearly cooked through (about 155°F in the thickest part). Move to a plate — they'll finish in the glaze.
- 3
Lower heat to medium. Add ⅓ cup balsamic vinegar, 2 tablespoons honey, and 2 minced garlic cloves to the pan. Scrape up the browned bits and simmer 2–3 minutes until the sauce looks syrupy and coats the back of a spoon — it should ribbon slowly, not run like water.
- 4
Return the chicken and any juices to the pan, spooning glaze over each piece. Cook 2–3 more minutes until the chicken hits 165°F and the glaze clings shiny and dark. Rest 3–5 minutes, slice, spoon extra glaze over, and finish with fresh basil if you have it. You want juicy chicken under a glossy sweet-tart balsamic glaze — not a watery vinegar pool or dry overcooked breast.
