    Heat the oven to 425°F and set a wire rack over a baking sheet. Mix the breadcrumbs with garlic powder, smoked paprika, cayenne, salt, pepper, and oil; the crumbs should feel like damp sand.

    Stir the yogurt, hot sauce, and salt in a shallow bowl. Pound the chicken breast to no more than ¾ inch thick, cut it in half, and season lightly. Dip each piece in the yogurt, then press it firmly into the crumbs.

    Set the coated chicken on the rack and bake for 12 minutes. Turn carefully and bake 10–13 minutes more, until the coating is browned and the center reaches 165°F.
