Heat the oven to 425°F and line a sheet pan with parchment. Cut 1½ pounds chicken breasts into 1-inch-wide strips and season with ¾ teaspoon kosher salt and ½ teaspoon black pepper.

Set out ½ cup flour, 2 beaten eggs, and 1½ cups panko mixed with 1 teaspoon paprika and 2 tablespoons olive oil. Coat each strip in flour, egg, then the seasoned crumbs.

Arrange the tenders with space between them and bake 16–20 minutes, turning once, until the coating is golden and the thickest piece reaches 165°F.

Rest the tenders 3 minutes before serving with mustard, barbecue sauce, or a yogurt dip. Move leftovers to a rack before reheating so the bottoms do not turn soggy.
