Pierce 2 large eggplants (about 2 lb) a few times with a fork. Roast over a gas flame, turning with tongs, or under a broiler on a foil-lined sheet, until the skins blister and blacken and the flesh collapses, 20–25 minutes — they should feel soft when you squeeze gently with tongs. Cool until handleable, peel off the charred skin, and mash the flesh with a fork; discard big seed clumps if they're bitter.

Heat 2 tablespoons oil in a skillet over medium heat until shimmering. Add 1 teaspoon cumin seeds and let them crackle 20–30 seconds. Stir in 1 finely chopped medium onion and cook until deep golden, 8–10 minutes — pale onion makes a flat bharta. Add 1 tablespoon minced garlic, 1 teaspoon grated ginger, and 1–2 minced green chilies; stir 30–45 seconds until fragrant.

Add 2 chopped tomatoes, ½ teaspoon turmeric, 1 teaspoon ground coriander, and ¾ teaspoon salt. Cook, stirring and mashing, until the tomatoes break down and look jammy with oil at the edges, 5–6 minutes.

Fold in the mashed eggplant and simmer uncovered 5 minutes, stirring often, until the mixture thickens and tastes smoky-savory through — not watery. Finish with chopped cilantro and a squeeze of lemon. Serve with roti, rice, or as a bowl over grains. You want smoky, soft eggplant in a spicy onion-tomato masala — not raw-tasting eggplant or a thin watery mash.
