    Heat the oven to 450°F. Prick 2 large eggplants all over with a fork, set them on a foil-lined sheet pan, and roast 35–45 minutes until they're collapsed, wrinkled, and very soft when you poke the flesh — you want a roasted, almost smoky smell.

    Let them cool until you can handle them, then split open and scrape the soft flesh into a colander. Drain 10 minutes so excess liquid runs off — watery eggplant makes thin baba ganoush.

    Mash or pulse the drained flesh with ¼ cup tahini, 3 tablespoons lemon juice, 1 finely grated garlic clove, ½ teaspoon kosher salt, and 2 tablespoons olive oil until creamy but still a little textured. Taste; add a pinch more salt or lemon if it needs brightness.

    Spoon onto a plate, swirl a well in the center, drizzle with more olive oil, and scatter 2 tablespoons chopped parsley. Serve with warm pita and cut vegetables. You want creamy, smoky baba ganoush with a lemon-tahini bite — not watery eggplant mush or a bitter raw-garlic blast.
