Heat the oven to 450°F. Prick 2 medium eggplants (about 2 pounds total) a few times with a fork, rub with a little oil, and roast on a sheet pan 35–45 minutes until the skins collapse and the flesh is soft and smoky. Cool 10 minutes, then scoop the flesh into a colander; let drain 5 minutes so the dip isn't watery.

In a bowl or food processor, mash or pulse the eggplant with 3 tablespoons tahini, 2 tablespoons lemon juice, 1–2 minced garlic cloves, 2 tablespoons olive oil, ½ teaspoon salt, and a pinch of cumin until mostly smooth with a few soft chunks. Taste — it should be lemony and sesame-forward, not bitter or flat. Add a splash of cold water if it's too thick to scoop.

Build bowls: spoon a generous swoosh of baba ganoush into each bowl. Add chopped cucumber, tomato, and a handful of greens or parsley. Optional: warm chickpeas or leftover roasted veg on the side.

Finish with a drizzle of olive oil, a sprinkle of sumac or paprika, and warm pita or flatbread for scooping. You want a smoky, creamy eggplant bowl you dig into with bread — not a bland puree sitting alone on a plate.
