Hard-boil 4 eggs: cover with cold water, bring to a boil, then simmer 9–10 minutes. Ice-bath 5 minutes, peel, and mash in a bowl with a fork until mostly smooth with a few small chunks — Japanese egg salad is finer than deli style.

Fold in 3–4 tablespoons Japanese mayo (or regular mayo plus a tiny splash of rice vinegar), a pinch of sugar, salt, and white pepper. Taste; it should be creamy, gently sweet, and eggy. Chill 10 minutes if you have time so it firms for spreading.

Trim the crusts off soft white sandwich bread if you want the convenience-store look. Butter or mayo the slices lightly so the filling doesn't soak through. Pile on a thick layer of egg salad and top with the second slice.

Press gently, wrap in plastic for 5–10 minutes if you want clean edges, then slice in half. The filling should peek out in a neat yellow band — soft bread, rich egg, no dry bites.
