Pat 1½ lb sirloin tip or sirloin steak dry and cut into 1½-inch cubes if not already. Season with 1 teaspoon kosher salt, ¾ teaspoon black pepper, and ½ teaspoon garlic powder. Optional: chill uncovered 30 minutes for a better sear.

Preheat the air fryer to 400°F. Mist the tips lightly with oil or cooking spray and arrange in a single layer — batch rather than pile.

Air fry 8–12 minutes, shaking once, until browned outside and medium-rare to medium (about 130–140°F). Rest under foil while you finish the vegetables.

Meanwhile, melt 2 tablespoons butter in a skillet. Soften ½ small sliced onion about 3 minutes, add 8 oz sliced mushrooms and a pinch of salt, and cook until tender, about 4 minutes. Move to a plate. In the same pan, melt the remaining 2 tablespoons butter with 3 minced garlic cloves for 30 seconds; stir in 1 tablespoon white wine or beef broth if using, plus 1 tablespoon chopped parsley.

Toss the steak tips and vegetables in the garlic butter. Serve over rice or with a salad. You want browned juicy steak tips in garlicky butter with soft mushrooms — not grey steamed cubes or a raw cool center.
