    Pour the boiling water over the bulgur, cover, and let stand for 20 minutes. Drain well and press out any extra moisture.

    Heat the olive oil in a small skillet. Soften the onion for 3–4 minutes, then stir in the garlic, cumin, coriander, and red pepper flakes for 30 seconds. Cool slightly.

    Pulse the chickpeas, bulgur, onion mixture, lemon juice, parsley, cilantro, breadcrumbs, and salt in a food processor until the mixture holds together but still has texture. Do not purée it smooth.

    Rest the mixture for 15 minutes. Shape into 16 compact balls or small patties; add another spoonful of breadcrumbs if the mixture feels wet.

    Preheat the air fryer to 375°F (190°C). Mist the basket and both sides of the falafel with oil.

    Air fry in one layer for 12–15 minutes, turning gently halfway, until browned and firm. Cook in batches as needed.
