Pat 2 pounds split chicken wings very dry and toss them with 1 tablespoon neutral oil. Mix 1 teaspoon baking powder, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon paprika, ½ teaspoon garlic powder, and ½ teaspoon onion powder.

Sprinkle the dry mix over the wings and toss until the coating is even. Heat the air fryer to 400°F and arrange the pieces with a little breathing room; work in batches if needed.

Cook for 8 minutes, shake the basket, then cook 8–12 minutes more. The skin should be deep golden and crisp, and the thickest part should register at least 165°F; wings are especially tender around 175–185°F.

Toss the hot wings with sauce or serve it on the side. Give them 2 minutes to cool before eating so the crust firms up.
