    Pat 4–6 chicken thighs dry (bone-in skin-on preferred, about 2–2½ lb). If you're using boneless skinless, pound the thick ends lightly so they're even. Season with a pinch of kosher salt if your crumb mix isn't already salty.

    Whisk 1 egg with 2 tablespoons milk in one bowl. In another, mix ½ cup breadcrumbs, ½ cup instant potato flakes (or more breadcrumbs), 1 teaspoon garlic powder or garlic salt, ½ teaspoon black pepper, and ½ teaspoon paprika if you like color.

    Dip each thigh in the egg, press into the crumb mix, then brush or drizzle with 1–2 tablespoons melted butter or oil so the coating browns.

    Preheat the air fryer to 380°F. Arrange thighs skin-side up in a single layer — batch rather than stack. Air fry 18–24 minutes, flipping once in the last third, until the coating is deep golden and the thickest part hits 165°F. Bone-in usually needs the longer end; dark meat is especially tender closer to 175°F.

    Rest 3–5 minutes before serving. You want crackly-edged chicken thighs with juicy meat — not pale soft coating or dried-out meat pulling off the bone too soon.
