Season 8 chicken tenders with ½ teaspoon salt and ½ teaspoon black pepper. Toss them with 2 tablespoons flour so the egg has a dry surface to cling to.

Whisk 2 eggs in one shallow bowl. In another, mix ½ cup regular breadcrumbs, ½ cup panko, 1 teaspoon Italian seasoning, 1¼ teaspoons garlic powder, 1 teaspoon onion powder, ½ teaspoon smoked paprika, 1 teaspoon salt, and ½ teaspoon pepper.

Dip each tender in egg, let it drip for a moment, then press it into the crumb mix on both sides. Heat the air fryer to 400°F while the coated pieces sit.

Arrange a single layer, mist the tops with cooking spray, and cook 7 minutes. Turn, mist again, and cook 5–6 minutes more, until crisp and 165°F in the thickest tender. Repeat with the remaining chicken and rest 3 minutes.
