Heat the air fryer to 400°F. Mix 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ¼ teaspoon onion powder, ½ teaspoon oregano, ½ teaspoon salt, ¼ teaspoon black pepper, and the optional pinch of cayenne.

Pat 2 pounds of drumsticks dry, then toss them with 1½ tablespoons olive oil and the seasoning. Rub around the narrow ends too, where seasoning tends to slide off.

Set the drumsticks in one layer and cook 12 minutes. Turn them with tongs and cook 10–14 minutes more, rotating any pieces that are browning faster than the rest.

Check the thickest drumstick near the bone; it should reach 175°F for tender dark meat. Rest 3 minutes before serving while the skin settles into a crisp finish.
